Puasa @ Dundee

First time puasa luar mesia nih...tambah pulak suami tak ada, sayu la jugak. First week teruk juga sebab puasa panjang, pukul 9 baru berbuka. Tapi Aidil steady je. First day Bob pun puasa (semangat berkobar-kobar). Tapi bila masuk second day, dah tak larat. Fizzy langsung tak tahan. So far hanya dua hari jer tahan sampai pukul 5.

Bulan puasa ni memang keje nye memasak. Almaklumla, kat sini tak ada bazar ramadhan. Minggu pertama masak pajeri nenas (tahan seminggu). Lauk lain tukar-tukar antara ayam panggang dan ikan siakap panggang, cicah air asam.

Pajeri Nenas

1/2 biji nenas
2 sudu besar bawang besar kisar (kat sini bwg merah susah dapat)
2 sudu besar rempah kari daging
1 sudu besar kerisik (buat dari dessicated coconut)
1-11/2 gelas santan sederhana cair
sedikit bunga lawang, kayu manis, pelaga dam cengkih
1-2 sudu besar gula-kurangkan kalau nenas dah manis
sedikit garam

Cara
1. Tumis bunga lawang, kayu manis, pelaga dan cengkih
2. masukkan bawang kisar.
3. bancuh rempah kari dengan air, tuang dalam tumisan. Tumis sehingga garing
4. Masukkan santan dan nenas, kacau sebati
5. masukkan kerisik, gula.
6. masak sehingga agak pekat/naik minyak.
7. masukkan garam
8. bila dah pekat, bolehla diangkat.

Boleh juga bubuh udang kering. Rendam dan tumbuk sedikit dan dimasukkan semasa menumis rempah.

Air Asam (dicicah dengan ikan/ayam/terung bakar)

belacan
cili padi hiris
air limau nipis-sedikit sahaja
sedikit garam
bawang hiris
tomato hiris (buang isi/bijinya)

-gaul semua bahan (kalau boleh ramas dengan tangan). Siap untuk dimakan

Sebelum berpuasa our group holding a farewell gathering for Malcom. He's leaving after finishing his phd and will join NHS start september first. Jadinya semua orang kena buat kek. Fikir punya fikir, jadi la Chocolate Layer Cake and Lemon Cheese Cake. Semua orang suka, best la kut.

Chocolate Layer Cake
(9 inch baking tin, 180 deg Cel)

Bahan
1 1/2 cup (340g) butter- softened
1 2/3 cup (340g) sugar
6 eggs
2 2/3 cup (340g) flour
3/4 cup (120g) finely ground almonds
3 tablespoon cocoa powder
2 teaspoon baking powder
2 teaspoon vanila
1/2 cup boiling water

Method

1. Beat butter and sugar untill fluffy
2. add eggs, one at time
3. prepare flour mix (flour, cocoa, baking powder, almond, vanila), mix well
4. mix in to the butter, sugar and egg mixture.
5. add boiling water. Mix well
6. Transfer into two tin. Bake 30-45 min. Do not over bake.

Frosting
1. Whisk double cream with sugar and lime juice until thickened-Keep in the fridge
2. Melt 80g butter and 200g chocolate.
3. Beat 2 eggs with 200g icing sugar. Mix with chocolate mix.
4. When cake totally cooled, apply chocolate frosting in between cake.
5. Sandwich both cake and spread whisked cream all over. Cover cake with shreded milk chocolate.
6. Keep in fridge to hard'n the frosting


Lemon Cheese Cake
(9 inch baking tin, 150 deg cel)

Base
1 cup cracker/tea biscuit (boleh guna biskut merry)- crushed
3 tablespoon butter-melted
3 tablespoon sugar
-mix all ingredient, press onto the tin, bake 10 min @150

Filling
1. Beat 1/2 cup sugar, cream cheese (2 packs), 1 tbsp lemon juice, 1 tbsp grated lemon peel @ medium speed
2. Add 1 cup sour cream, mix well
3. Add 3 eggs, 1 at a time. Mix on low speed
4. Pour into base
5. Bake 50 min, or until centre of the cake just set. Do not over bake-pecah
6. Cool in fridge overnight
7. Decorate with strawberries
